Further to our short discussion on pronunciation on Monday, when I raised a question on how to say 'nos', I have come across this guide and wonder if it's helpful. I've always understood choral Latin to be pronounced in an Italian style, but perhaps I'm wrong.
The 'o' sound in 'nos' is rounder, as Alex suggested, but it matches other 'o' sounds too (as in 'domine'). I expect there'll be some disagreement, as person in the audio files (who sounds Italian) says excelsis as 'eks-shelsees' rather than 'eks-chelsees'. But I think consistency is important, so I'm happy to go with the general consensus!
